Ommegang and HBO have released the newest beer in the Game of Thrones collaboration series. Through its first three seasons, the critically acclaimed drama has become the biggest show on HBO. Named after the motto of House Targaryen, Fire and Blood is inspired by Daenerys Targaryen and her three dragons, Drogon, Rhaegal and Viserion. To celebrate the rebirth of dragons, three different labels were created by the Game of Thrones visual effects specialists, each depicting one of Daenerys’ feared dragons.
The beer pours a muted amber color with rust hues. There is noticeable amount of sediment. The billowing off white head is frothy and shows great retention. Once the head begins to dissipate, an impressive lacing is left behind. The carbonation is notable. Tiny bubbles continuously rise to the top of the glass like a quality champagne.
Malty aromas dominate the bouquet and first. There is a sweetness present showcased by notes of ripe stone fruits and raisins. An aroma reminiscent of honey intermingles with floral notes. There are spice notes of nutmeg and bright coriander along with a touch of white pepper. A musty smell is present but not overwhelming.
On the palate roasted malt notes once again hit first. Along with the malts are rye notes which impart a bourbon-y flavor profile and provide a drying mouthfeel. Yeasty esters are notable from the beginning as well as a hint of musky funk. There is a sourness that while tame, is similar to that in a Flemish Sour. Dark dried fruit notes like plums and raisins make an appearance and balance the sourness. On the finish the pepper spice finally kicks in and lingers slightly.
